Brain Masala:
Ingredients:
Mutton brain (boiled) 2
Onion (chopped) 1 (large)
Tomato (boiled and chopped) 1 cup
Ginger garlic paste 1 tbsp
Oil ½ cup
Salt, chili, turmeric as required
Dried fenugreek leaves 1 tsp
All spice powder ¾ tsp
Coriander as required
Green chili as required
Chaat masala 1 tsp
Cream 2 tbsp
Ginger as required

Method:
Boil the mutton brain with turmeric and clean well. Now heat oil and fry onion. Then add ginger garlic paste, tomato, salt, chili and turmeric. Cook well. Once it is cooked add boiled mutton brain and all spice powder. Cook properly. In the end add cream, chaat masala and dried fenugreek leaves. Cover and cook. Then add coriander, green chili and ginger. Serve hot.

Kuchla Gosht Fry:

Ingredients:
Beef (boiled) ½ kg
Onion (chopped) 1 (large)
Green chili 6-8
Ginger 1 piece
Garlic 3-4 cloves
White cumin 1 tsp
Vinegar 2 tbsp
Ginger garlic paste 1 tbsp
Chaat masala as required
Fried onion ½ cup
Salt as required
All spice powder ½ tsp
Yogurt ½ cup
Black pepper (crushed) 1 tsp
Clarified butter ½ cup
Coriander, mint leaves for garnish
Tomato (sliced) for garnish

Method:
Boil the beef with salt and allow it to cool. Then add it to mortar and pestle and crush thickly. Now heat clarified butter and fry onion. Then add ginger garlic paste, salt and yogurt. Cook well. Then crush green chili, garlic, ginger and cumin. Also add vinegar and mix well. Once the yogurt water becomes dry, add crushed beef, green chili mixture, all spice powder and crush black pepper. Mix well, cover and cook for about 5 minutes. In the end place it in a dish and garnish with chaat masala, fried onion, coriander, mint leaves and tomato slice.
